Italian Quesadilla :: Krumbs Eats ::





I don't know about you but I am always ALWAYS looking for quick easy meals that my whole family will love. That's not an easy task with 4 kids. Everyone has a preference and everyone has an opinion. But every once in awhile you hit gold....and I'm not talking Kraft Mac n Cheese. 

Let's talk quesadillas. Quesadillas are something that everyone can choose what they want. They take no time at all to make and everyone in the family can enjoy them. They are a great lunch and/or dinner.

The kids prefer a just a plain cheese quesadilla. I prefer mine with cheese chicken and sometimes I'll dice up some onion and tomato in there too and Mike wants a whole slew of things in his! The more stuff the better! I've also been known to make an Italian quesadilla and that just makes my husbands Italian heart go pitter patter. I'm not a huge fan of bringing my kids in the kitchen (I lack the patience for that) but, at the same time, I know its really important to get them in the kitchen. These are the perfect thing to have them help you with. Especially if you want them to choose for themselves what they want in the quesadilla. 




Since it was such a hit with my husband, today I'm going to share my spin on an Italian quesadilla. It kind of sounds like an oxymoron but trust me its delicious!!





Ingredients:

  • 2 small Tortillas
  • 2 cooked chicken tenderloins (cut into bite sized pieces)
  • 1/2 a cup of baby spinach leaves
  • 4 slices of tomato (cut into bite sized pieces)
  • 1/4 cup of mozzarella cheese (or more if you like a lot of cheese, I don't blame you)
  • 1 tablespoon of basil pesto

Instructions:

  1. Lightly grease a small frying pan and place over a medium heat.
  2. Place one of the tortillas into your frying pan and add the sliced chicken, sliced tomato, baby spinach leaves, and mozzarella cheese.
  3. Spread the basil pesto over one side of the remaining tortilla and place on top of the tortilla already in the pan.
  4. Cook the Quesadilla for 3 minutes or until the tortilla begins to brown before carefully flipping over and cooking for another 3 - 4 minutes or until the cheese has melted and the tortilla has browned.
  5. Eat up!!!
